Foreword
Someone once told me that, “Writing requires an abundance of living.” Twenty years and a lot of living later, I decided to compile this book.
I am originally from the south. Some of the stories told in the south are amazing. There are those that are true and those that are not. In this book, names were changed to protect the guilty!
Holding my mother in the esteem and with the respect she deserves, I present to you her recipes and her essence. Along with her tasty recipes, I have included some funny, sometimes sad, unbelievable and uniquely southern stories about growing up in a small rural Alabama township.
A portion of the sales from this book is given to Alzheimer’s Research. My mother is sitting in an Alzheimer’s unit in an Alabama Nursing Home. She was diagnosed in 2000. I cannot have her mind back, but I can document some of my memories of her. I can also put into print some of those handwritten recipes she so lovingly gave me through the years and share them with you. Together we may be able to find a cure so other daughters can have their mothers’ minds as long as they have their mothers.

Fried Veggets
Veg out with these fried veggets! No guarantee of weight loss with these babies!
Use judgement on salt and pepper and use just enough oil to cover the bottom of the skillet, adding as needed. Nonstick spray is not recommended.
Fried Yellow Squash and Onions

Fried Green Tomatoes
For each of the above vegetables, cut them diagonally (short-ways), not horizontally (long-ways), so that you end up with quarter-sized squash, half-dollar sized onions, dime-sized okra, and silver dollar-sized tomatoes.
Wash, using container filled with flour and with a lid, shake vegetables inside to coat each piece. Place in skillet, turning over after browning. Remove from skillet and place on a paper towel.
The great thing about these vegetables is that you can choose how much to use and how much to serve, but remember, prepare just enough for one setting. They don’t work well as leftovers.
Serves as many as you like!
